We explained the process of making our Pappardelle Alla Chiantigiana but what is the best wine to go with it? Here at our restaurant in Florence, we have chosen the Chianti Classico Santedame from the Santedame Ruffino estate. This vineyard is located in the Chianti's Golden Basin, Conca d’Oro. The region is known for having low yields of grapes, this makes the wine very concentrated and with a very interesting minerals content.
The Santedame Chianti Classico is made of three kinds of grapes: the Colorino, the Merlot, and the Sangiovese. The selection of the grapes is very meticulous and only the best batches are chosen to ferment the Santedame. Here at Giannino, we chose this wine because it’s the perfect Chianti Classico to go with our Pappardelle Alla Chiantigiana.
